This little 1955 treatise on omelettes is a compendium of recipes, but the introductory history of omelette-making is the most interesting part of the book, pappered with quotes and stories of early omelette makers. Embedded in the stories are directions for making a basic omelette, and how to augment those directions for other less usual types. I discovered this useful book when Julia Child recommended it in "From Julia Child's Kitchen." It will renew your interest in discovering how to use up just about any left-overs to make a quick and delicious meal for any time of day.

The Omelette Book was referred to by Julia Child in a recent public TV rebroadcast of her most popular shows. It is a comprehensive presentation of one of the most popular dishes for breakfast. All types, all methods. It along with Julia's show on an omelet has changed my manner with which I prepare my morning omelet. Often older things present the best manner to produce modern experiences.
