Well I bought this book to try a few recipes as seen on the new Bravo series, Chef Academy. This is one of those "looks good on the outside yet lacks substance on the inside" kind of cookbooks. The recipes are by by weight so get your scales out which is fine yet the instructions are incomplete and the results of two recipes I have tried came out poorly. He may be a great chef (he is popular in Europe according to the show) yet my advice is that he needs help writing cookbooks.

My background is not as a professional chef yet a love to cook and own many cookbooks. This is the very first cookbook I have ever tried that has recipes with poor results. There are many other good french cookbooks... I would strongly advise buying them and skipping this one.

I am adding to this review many weeks after my original review, just to make certain I have kept my "objectivity". Unfortunately, I cannot improve my rating. As I stated before, I bought the book out of curiosity because the food shown on the Bravo series Chef Academy intrigued me. I felt the book was lacking, yet perhaps I was being overly critical. Then I downloaded from Bravo TV website yet another recipe, this one for Chicken with Chocolate- it looked very tasty. I had to do quite a bit of guessing because the recipe does not specify when to add listed ingredients (in this case cumin seeds) or even what temperature to set the oven (which the chicken bakes for 45 minutes). This is the type of thing, along with poor results of other recipes, that give this book a failing grade. Sorry Novelli... I really wanted to like your book.

For success with these recipes, you definitely need kitchen scales(which I highly recommend for anyone who cooks and can be easily bought on Amazon.). Every recipe I have tried, worked and are kept in my permanent recipe file: the radish soup, the potato gratin, etc. However, the recipes I have tried, work better with adjusting some quantities of ingredients according to personal taste. So I wouldn't recommend this cookbook to a beginner. I also suggest using the best ingredients possible - and in season. As an intermediate level cook, I find this book to be approachable french cooking and inspirational.

one or two recipes i am really excited to try but not an amazing cook book. I own a lot of cook books as baking/cooking is a passion of mine and this is over rated.

This cookbook was a big disappointment. Although there may be some good recipes in it, all the ingredients are in ml or g, rather than tsp. etc. Try and figure that out for each recipe. There should be either a chart in front of the book to translate these measurements or a warning to buyers that the recipes are not in American measurements. Also many recipes contain items that may be familiar in the UK but not in America--what is castor sugar? double cream? creme fraiche? How do you warm flour? One day when I have lots of time to hunt ingredients and translate the measurements, I might try one of these recipes--- but I doubt it. The book is not worth the money.

I love this cook book. It is not for the beginner cook. The reciepts are in eauropean measurments, but if you have a food scale it is really easy to follow them. The food is worth every penny you will pay for the book.
