This book has really helped me to learn to cook quick and healthy meals. For those with diabetes, it lists food exchanges and ingredient modifications to allow us to work within common restrictions. I specifically liked the practical and down-to-Earth recipes. The bonus is that ingredients in the book are familiar. This is my fourth Quick and Healthy book I have purchased or received. I received my first one by participating in a Health Program thru my work. Each one is very handy with much information and many recipes that I have used over the years. It is not meant to be a gourmet cookbook. It is simple to use and uses only a few ingredients for most of the recipes. I cook for a diabetic husband and find many recipes suitable for diabetics.

Owned this cookbook since 1993 and since shared it as a gift to many. This book and it's sequel (Volume II) make healthy eating easy for beginners and also for busy people.

Many recipes in this book are still staples in my cooking routine. I always have the ground turkey version of the ''Baked Meatballs'' in my freezer. I've shared the ''Cream Cheese Topping'' recipe with everyone I know. Except that I only use 1 Cup of skim milk instead of 2. It makes a quick, easy Frosting for any cake that no one would guess is totally fat and sugar free. ''Salmon Cakes'' are always an easy dinner. And the Focaccia Pizza tastes better than takeout with a lot less fat content.

I've since added Evelyn Tribole's ''Healthy Homestyle'' Cookbooks, along with these, to my list of all time favorites. They are all very dogeared. They also make great gifts for family and friends who are into healthy foods that really taste terrific.

I showed this book to my therapist (Cardio-rehab) and she took down the pertinent information to purchase one. I made two recipes from this book to take in as a treat for my rehab classmates on my graduation from rehab. The recipes are heart healthy and diabetic friendly.

I love this cookbook, and use it all the time. Great for people who want to eat "regular" food, but lightened up with less fat and calories.

My favorite recipe is the enchiladas...this recipe is worth the price of the book alone. Makes the best enchiladas I have ever had, and my husband loves them too. Shhh...they taste so good, he does not know they are low fat! Let's just keep that our little secret!

If you are looking for wonderfully tasty recipes for great "comfort food" with less fat and calories, this book fits the bill!

At the beginning of the year, I bought several cookbooks geared towards healthy cooking. THIS is my favorite. I've tried a variety of recipes from the book and they have been good to great. I haven't tried one I thought was lousy or just-ok. I was especially impressed by two cakes in this book. They are delicious! Yesterday I tried a chicken dish that prompts me to write this today. It was SO good.

Also,it lists the exchanges and offers alternatives for sugar and fat which are helpful to someone like me that doesn't mind using regular sugar and whole eggs in cooking. However, the same recipe could be used by someone that wants to use artificial sweetener and egg substitutes.

I'm going to buy volume 2!

I love this book as it has five menus per week with a shopping list and so far the menus have been easy and delicious. It was recommended by a dietitian who I consulted for my diabetes.
So this book helped me a lot! It provided me with new ideas for dinner, some I liked, some I didn't, some I loved and kept over the years.

It also taught me how to cook interesting foods that I haven't cooked before, thus making cooking easier and tastier!
