I own both her French and Italian vegetarian books, and while my cookbook library comprises about 150 volumes, they are in my top 5. I've never made anything from a Paola Gavin book which wasn't excellent! (My husband regularly requests the Leek Tart from the French book.

Not surprisingly vegetarians have often been discriminated against – sometimes tortured, even killed – for their beliefs. So the history of vegetarianism is also a history of dissidence and revolt.

This is good news for me, as many of these foods appear in my weekly rotation. I could, however, be eating more beans and grains.
