Fantastic book, bought it for my brother for xmas and he has been making meals for all his work colleagues and they have all enjoyed the meals he has produced. First class book by a first class chef A++++

I got this because I love the Guardian's "How to Make the Perfect..." column by Felicity Cloake (even though she has NO knife skills whatsoever).

It's odd for me to be writing a review, because this is the food I grew up with, yet is no longer mine (well, except for pork pies!). These days my mouth lives in SE Asia.

But just tonight my roommates unexpectedly expected dinner, and I discovered I had every last ingredient for his chicken soup in veloute sauce, including a pastured chicken and homemade double stock.

(Take normal, excellent chicken soup, add a stick of butter made into a roux with a little flour. Restauranteurs call it "monter au beurre." It's blatant cheating, but no complaint has yet been registered.)

My roommates swooned clean away, declaring it the best chicken soup ever served. I'd made plenty; got little, which was fine, because it was not exactly my cup of tea. But I got interested in the book, and discovered that the man indeed knows his stuff, using really clean and efficient technique. I'll update when I make something else, but there is plenty in here to rekindle and warm the cockles of my heart for the food I used to love.

I own too many cookbooks to count, and this one is the best. What makes this cookbook so great is the variety of recipes - they range from simple, classic dishes (baked penne bolognese, roasted chicken) to those more elevated (pommes mousseline, shallot tatins) - as well as the amount of detail included in each recipe. The "key to perfection" section for each recipe is particularly helpful because it includes tips that might not be common knowledge and assist in getting the recipe just right.

I own about forty cookbooks and this is one of my favourites- i can
barely believe no one's written a review of it!

Each recipe- they cover a wide range of dishes from braised lamb shanks to treacle sponge- comes with a 'Key to Perfection' section; tips to help you get the dish right, often accompanied with little photos to illustrate what you should be looking out for while cooking. Some recipes even come with a little suggestion as to what you could do with the dish should it not turn out perfect (eg beating cold cream into pudding to stop it from curdling if you let it get too hot over the stove or making an Eton Mess with crumbled meringues).

I really liked how easily available the ingredients the recipes call for are- no spending half a day sourcing out exotic ingredients for this one. Also, I really enjoyed the tone of the book- Marcus comes across as a professional chef really interested in teaching the home cooks and bakers how to achieve success in the kitchen.

So far, I've tried the griddled salmon (moist and perfectly done with a crisp crust), the Bittersweet Chicory Salad (the dressing's so good i have it in the fridge at all times now), roast pork belly with crackling (this was incredible and polished off within ten minutes of coming out of the oven) and the chocolate chip cookies (crisp and loaded with chocolate chips- these are my family's current favourite choc chip cookies). They've all turned out amazing, inspite of my very limited cooking skills.

What can i say- Marcus Wareing just really inspires confidence and perfection in the kitchen!
