I've had this cookbook for a quite a few years now and have just started digging into it. While the information about country homesteading is good to have, that is not the primary reason I bought the book. I bought it because I like cookbooks that offer simple and delicious recipes.I have no doubt that the recipes in the main dish and vegetable sections are fine because I have cooked three recipes from the book. The Chicken Rice Pilaf on page 138 came out perfectly and was delicious. I'm not so sure about the recipe proportions in the baking section though. I made a batch of brownies from this cookbook on Friday. The recipe called for melting 1 stick of butter with 1 cup sugar, and 2 oz. unsweetened chocolate. I honestly think this was too much butter because I had a layer of butter swimming on top. I spent quite a bit of time trying to incorporate it into the chocolate before I gave up and poured it into the flour mixture hoping for the best. The recipe also didn't say whether to butter the pan. Since I had so much excess butter in the recipe, I decided not to. My brownies were stuck to the pan. I was able to get them out in one pieces with a really sharp spatula though. The brownies had the fudgy consistency I love but were not chocolatey enough. My husband said he tasted the sugar more than the chocolate.

This morning, I decided to make the blueberry muffins on page 197. As I was mixing the wet ingredients, I thought to myself is 1/3 cup of milk enough liquid to make a batter with 2 cups of flour? My instincts were right. As I poured the liquid part of the recipe into the dry part of the recipe, I realized I had more of a biscuit dough than a muffin batter. I pressed on though and spooned the dough into muffin cups and put them in the oven hoping for best. About 20 minutes later, I took them out and they had risen a little and turned golden but still looked pretty much like they did when I put them in the oven. I ate one and realized I had just made the best tasting blueberry scone I've ever had. Two recipes with issues cannot be a coincidence, so I pulled out one of my most trusted cookbooks, The 1997 Joy of Cooking, to compare similar recipes. Sure enough, the blueberry muffin recipe in the Joy of Cooking cookbook, calls for almost 4 times the amount of milk as the recipe in this book. I then checked the Classic Currant Scone recipe in the Joy of Cooking. It called for 1/2 cup cream and 2 cups of flour so very similar proportions to the recipe in this book. I also checked the Brownies Cockaigne recipe in the Joy of cooking and it calls for 4 oz. of unsweetened chocolate, not 2 oz., to be melted in a stick of butter.

Despite the inconsistencies, I will continue to use this book because I really do think it's a good resource and the recipes are delicious even if you end up with something you weren't expecting. I just know now to compare the baking recipes to the recipes in more modern cookbooks.

Folks, this book is indispensable for anyone who wants to feel at home in their own kitchen--country or otherwise. It is and has been the go to book for just about every problem I've needed to solve in the kitchen, and still continues to amaze me with its exhaustive coverage. Susan Restino has a practical approach, combined with a sense of freedom to explore, that highlights what is important to know about the foods and tools you're working with, and lets you figure out how you want the thing to taste, or what ingredients you might like to sub out. Her recipes are big, broad strokes that are hard to mess up. Her coffee cake recipe alone could get just about anybody out of a scrape. Most importantly, she tells you why you ought to do what she suggests, and what will happen if you fudge it a little, or improvise. She dispels snooty kitchen "magic" myths, and cues you in on many of the shortcuts she's figured out along the way. She helps you think about a meal and what is important about it for which reasons. Are you cooking for someone who's sick? Are you trying to use up a huge pile of zucchini? Mrs. Restino is there for you. She's like the kitchen's own country doctor.

I was expecting a book that dwelt primarily on the strategies available for successful wood stove cookery - tips and hints for dealing with the vagaries that come with that venue of effort. In some ways, I was not disappointed. The first chapter did provide an outstanding overview of the wood stove, its functions, and management techniques. I was actually quite impressed by how well the material was presented regarding the wood stove, while enjoying the conversational nature of the instruction. My hopes were high as I moved forward in the book. However, it was not to be. What followed were chapters on the basic skills associated with a truly country life. The second chapter dealt with vegetables, and included some wonderful, simple recipes for cooking them. Other chapters covered grains, nuts, and seeds; bread making; desserts; eggs; cheese; and basic cooking menus. I gather the assumption is that after the opening information provided about wood stoves, any person should be able to apply the described principles without further concern. I was hoping for cooking times and kindling amounts specific to each dish. Even without this more detailed information, I enjoyed the book for what it was - an overview of living country. The recipes included covered the basic food needs for anyone trying to live as close to the land as possible, and I appreciated this. That is the charm of the book - it's real, practical and eminently "doable." It's just not wood stove specific. In fact, any cooking source will do to apply the country know-how the book provides. My recommendation: get the book for an excellent overview of the wood stove and how it functions, but don't expect it to focus solely on the wood stove. Be open to the self-sufficient ways that the book outlines and the neighborly way in which the material is presented.

The recipes in this book are simple and delicious. You don't need a bunch of exotic spices. The grains, vegetables, and meat are able to take center stage instead of being overpowered by spices (although I do like exotic food, sometimes all you need is a little salt and garlic). I love the Oat Raisin Treats and look forward to making the green pasta.

I've read a lot of food growing/cook books, and this is by far the best when it comes to getting plenty of ideas across clearly in the fewest words possible. Loads of practical ways of preserving and cooking great food, that most people can use, with items they already have around the house. Something for everyone, no matter how much or how little space or knowledge you have. I found it at the library, and will be getting my own copy now! It's too good not to have right at hand.
